Our Pinot Noir is a great match for these mouthwatering sliders, which feature fresh sourdough buns filled with spiced pork sausages and sweet marinara sauce.
Sausage
Ingredients:
- 3 pounds ground pork
- 3 garlic cloves, minced
- 2 tablespoons salt
- 1 tablespoon freshly ground pepper
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground cloves
- 1 teaspoon ground allspice
- 1 teaspoon ground coriander
- 2 tablespoons sugar
- 1 bottle (750 ml) red wine
- 1 package natural sausage casings
Directions:
To prepare the sausage, in a large bowl, combine the pork, garlic, salt, pepper, cinnamon, nutmeg, cloves, allspice, coriander and sugar and mix thoroughly with your hands. Add the wine and mix to combine. Cover and refrigerate overnight. Run the pork mixture through a sausage stuffer using natural casings (available in most meat shops). Bring a large pot of water to a boil. Add the sausages and boil for 15 minutes.
Marinara Sauce
Ingredients:
- 1 large onion, diced
- 2 red bell peppers, seeded and diced
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped fresh flat-leaf parsley
- 1 cup red wine
- 6 cups marinara sauce (store-bought or homemade)
- 10 ounces diced tomatoes
- 10 ounces ground tomatoes
- 2 garlic cloves, minced
Directions:
To prepare the marinara sauce, in a large saucepan over high heat, combine the onion, bell peppers, basil, parsley, wine, marinara sauce, diced tomatoes, ground tomatoes and garlic. Bring to a boil, then reduce the heat and simmer for 2 to 3 hours.
Serve
Ingredients:
- 1 package sourdough slider buns
Directions:
To serve, toast the slider buns. Add a sausage to each bun and pour the marinara sauce over to taste.
