This Foppoli family recipe is traditional of their Northern Italian hometown. With sweet and savory undertones, the creamy, saffron-scented risotto brings out the delicate yet earthy notes of our Pinot Noir.

  • Olive oil as needed
  • 1 cup chopped onions
  • 1 1/2 cups Arborio rice
  • 1/2 cup white wine
  • 3 cups chicken broth
  • 1/2 cup unsalted butter
  • 1/2 teaspoon saffron
  • 1/2 cup grated Parmesan cheese


In a large sauté pan, warm some olive oil. Add the onions and cook, stirring occasionally, until translucent. Add the rice and stir while adding the wine. 

Pour in the broth 1 cup at a time, stirring until the liquid is fully absorbed. The risotto is done when the rice is just tender and the liquid is thick. Stir in the butter, saffron and cheese until melted and serve.
