A robust Brazilian black bean stew.

Ingredients:
  • 1 medium Onion Diced
  • 1 clove Garlic Minced
  • 2 Bay Leaves
  • 1 pound Dry Black Beans
  • 1 Ham Hock
  • 4 ounces Bacon Diced
  • 4 ounces Ham Diced
  • 4 ounces Pork Loin or Pork Shoulder Diced
  • 4 ounces Linguisa Sliced
Section Directions:
Render bacon linguisa and ham in a 6 quart Dutch oven until crispy.
Remove bacon linguisa and ham and set aside.
Sweat then onion and garlic in the rendered fat from bacon and ham.
Add the drained beans ham hock and bay leaves.
Cover with water about 3 inches above the beans.
Bring to a boil and simmer until beans reach the desired tenderness.
Return the bacon ham and linguisa to the pot.
You may need to add more water or stock to the pot.
Remove the bay leaves and ham hock season with salt and pepper to taste.

Serve as is or with rice.
