Irish Stew

A hearty fall/winter dish which pairs perfectly with bold red wines!

Ingredients:
  • 1 tablespoon Bacon Fat or Beef Tallow, Bacon Fat or Oil
  • 1 medium Onion Diced
  • 2 stalks Celery Diced
  • 1 medium Carrot Diced
  • 1 clove Garlic Diced
  • 1 sprig Fresh Thyme
  • 1 Bay Leaf
  • 1 pound Beef or Lamb Medium Dice
  • 12 ounces Irish Stout
  • 8 ounces Rockpile Zinfandel
  • 1 cup Beef Stock
  • 1 tablespoon Flour (Optional) will lend to a thicker finished sauce
Section Directions:
Brown the meat using the tallow or oil in a large Dutch oven. 
(If using flour coat the meat with flour before browning)
Remove the browned meat and set aside.
Add the onion carrot celery and garlic to the same pan and sweat until translucent.
Return the meat to the pan and deglaze with the beer and wine.
Reduce slightly.
Add the herbs and stock then simmer until tender.
Season with salt and pepper.

Serve over mashed potatoes or roasted red potatoes.
