Chase away winter's chill with this flavorful soup full of vegetables, pasta and meatballs. A meal in a bowl! Enjoy with a glass (or two) of Orsi Family Vineyards Aglianico, Sangiovese, Primitivo or Negro Amaro.
Ingredients:
- 2 tablespoons Orsi Olive Oil
 - 1 each Yellow Onion Chopped
 - 2 each Carrots Diced 1/4"
 - 2 ribs Celery Diced 1/4"
 - 2-3 cloves Garlic Minced
 - 1 each Zucchini Diced 1/4"
 - 6 cups Chicken Broth
 - 1 cup Tomatoes Crushed with Puree
 - 2 teaspoons Rosemary Chopped
 - 2 teaspoons Salt
 - 1 tablespoon Parsley Chopped
 - 1/4 teaspoon Black Pepper
 - 1 cup Macaroni
 - 16-20 Meatballs Frozen or Homemade
 - Parmigiano Reggiano or Pecorino Grated
 
Receipe Directions:
In a large pot, heat the oil over medium heat. When oil is shimmering, add onion, carrots, celery, and garlic. Cook, stirring occasionally, until the vegetables start to soften, about 5 minutes. Add the zucchini and cook, stirring occasionally, for 5 minutes. Add broth, crushed tomatoes with puree, rosemary and salt. Bring to a boil, then reduce heat and simmer, partially covered, for 10 minutes. Add parsley, black pepper and macaroni. Simmer for 5 minutes. Add meatballs and simmer 8-10 minutes or until macaroni is tender and meatballs register 165 degrees on an instant-read thermometer. (If soup is not served right away or is being reheated, you may need to add some water or stock.) Serve with grated Parmigiano Reggiano or Pecorino.
