A playful twist on a classic Mediterranean street food, reimagined in slider form for easy entertaining.
Tzatziki
Ingredients:
- 1 cup Unsweetened Greek Yogurt
- 1/2 medium Cucumber Grated and squeezed of excess water
- 1 1/2 tablespoons Lemon Juice
- 1 clove Garlic
- 2 tablespoons Fresh Dill Chopped
Section Directions:
Prepare the Tzatziki: In a bowl, combine Greek yogurt, grated cucumber, lemon juice,1 garlic clove finely minced, and dill. Season with salt and pepper to taste. Cover and refrigerate until ready to use.
Ingredients:
- 1/2 pound Ground Lamb
- 1/2 pound Ground Beef
- 1 medium Yellow Onion Quartered
- 3 cloves Garlic
- 1/2 bunch Fresh Mint Leaves
- 1/2 bunch Fresh Parsley
- 1/2 cup Panko Breadcrumbs
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper Ground
- 1/2 teaspoon Allspice Ground
- 1/4 teaspoon Cayenne Pepper
- 1/4 teaspoon Cardamom
- 1/4 teaspoon Sumac Ground
- 1/6 teaspoon Nutmeg Ground
- 1/2 teaspoon Paprika
Section Directions:
Lamb Kofta Patties: In a food processor, pulse onion, remaining garlic, mint, and parsley until finely chopped. Add to a mixing bowl with ground lamb, ground beef, breadcrumbs, and spices. Mix until just combined (do not overwork). Form into 12 small slider-sized patties. Grill or pan-sear over medium-high heat, about 3–4 minutes per side, until browned and cooked through.
Assemble the Sliders
Ingredients:
- 12 Brioche Slider Buns
- 1 cup Pickled Onions Thinly Sliced
- 1/2 cup Feta Cheese Crumbled
- 1 cup Baby Arugula
Section Directions:
Assemble the Sliders: Lightly toast the brioche buns. Spread tzatziki on the bottom bun. Place a lamb kofta patty on top. Add a few pickled onion slices, crumbled feta, and a handful of arugula. Cap with the top bun and secure with a pick if needed.
