Savory Lamb Sliders with Tzatziki

A savory dish of lamb sliders with pickled onions, tzatziki on Hawaiian rolls
Ingredients:
- 1 pound Lamb ground
- 1 Shallot minced
- 2 tablespoons Mint finely chopped
- 2 tablespoons Parsley finely chopped
- 1 tablespoon Sea Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Cumin
- 1/4 teaspoon Paprika
- 1 clove Garlic minced
Directions:
Work ingredients into the ground lamb meat with a spoon or your hands. Form into six patties and set aside.
Quick Pickled Red Onion
Ingredients:
- 1 Red Onion Julienned (thin slices)
- 1 cup Red Wine Vinegar
- 1/4 cup Sugar granulated
- 2 tablespoons Sea Salt
- 1 tablespoon Pickling Spice of choice
Directions:
Put sliced onion into a mason jar or a glass measuring cup. Bring the pickling mixture to a simmer in a sauce pan on the stovetop at a low medium heat, stirring gently. Only simmer as long as necessary to dissolve the sugar. Pour the hot mixture over the sliced onion, being sure to cover onion slices completely. Cover and let sit for thirty minutes. This should be enough time to make this quick pickle. Make the tzatziki while the red onion is pickling.
Tzatziki
Ingredients:
- 1 cup Greek Yogurt strained
- 1 Small Cucumber grated
- 1 tablespoon Mint finely chopped
- 1 tablespoon Dill finely chopped
- 2 tablespoons Lemon Juice
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
Directions:
Use a small, clear glass bowl, or any other attractive bowl you have. Combine until ingredients are consistent. Prepare an attractive serving spoon.
Ancillary Slider Ingredients
Ingredients:
- 1/2 head Small-Leaf Butter Lettuce
- 1 package Hawaiian Rolls
- 1/2 pound Feta Cheese crumbled
Directions:
Have these ingredients at the ready to make sliders once the patties are cooked. For an attractive display, take ingredients out of packaging and use attractive bowls and/or dishes.
Directions:
Grill the lamb patties on a griddle or in a pan. They are prone to fall apart on a gas grill. Have the condiments, including the pickled red onions, displayed and ready for guests to form sliders to their liking. Diners can put butter lettuce on the rolls, then a lamb patty, then layer with tzatziki, crumbled feta cheese and pickled red onions. Enjoy!
