Slow Smoked Baby Back Ribs with Peanut Chipotle Sauce

Ingredients:
  • 2 cups Soy Sauce
  • 1 cup Water
  • 4 tablespoons Ginger chopped
  • 6 cloves Garlic chopped
  • 2 racks Baby Back Ribs
  • 3 tablespoons Unsalted Butter
  • 1 cup Yellow Onion diced
  • 1 28 ounce can Plum Tomatoes chopped
  • .25 cup Ketchup
  • 3 tablespoons Dijon Mustard
  • 2 tablespoons Dark Brown Sugar
  • 4 tablespoons Black Strap Molasses
  • 2 tablespoons Honey
  • 1 teaspoon Cayenne Pepper
  • 1 tablespoon Ancho Chili Powder
  • 1 tablespoon Pasilla Chili Powder
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Worcestershire Sauce
  • .5 cup Creamy Peanut Butter
  • .25 cup Soy Sauce
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Canned Chipotle Peppers

Directions:

Step 1: Prepare the Marinade

Ingredients You’ll Need:

1 cup of soy sauce
1 cup of water
1 tablespoon of fresh ginger (finely chopped)
3 cloves of garlic (finely chopped)
What to Do:

Take a medium-sized saucepan and pour in the soy sauce and water.
Add the chopped ginger and garlic to the saucepan.
Place the saucepan on the stove over medium heat.
Let the mixture come to a boil (you’ll see bubbles form).
Once it’s boiling, turn off the heat and let it cool down for about 15-20 minutes.

Marinate the Ribs:
While the marinade is cooling, take your ribs (about 2 pounds) and place them in a large roasting dish or a container.
Once the marinade has cooled, pour it over the ribs. Make sure the ribs are fully covered by the marinade.
Cover the dish with plastic wrap or a lid and place it in the refrigerator for 24 hours. This allows the flavors to soak in.

Step 2: Make the Peanut-Chipotle Sauce

Ingredients You’ll Need:

2 tablespoons of butter
1 onion (finely chopped)
3 cloves of garlic (finely chopped)
2 cups of tomatoes (canned or fresh, chopped)
8 additional ingredients (like cumin, chili powder, honey, or your favorite seasonings)

What to Do:

In a large saucepan, melt the butter over medium-high heat.
Add the chopped onion and garlic to the butter.
Cook them until they become soft and see-through (this is called "sweating" them), which should take about 5-7 minutes.
Next, add the chopped tomatoes and stir.
Turn the heat down to low and let the tomatoes simmer for about 15 minutes.

Add More Flavor:

Now, add your chosen 8 ingredients (seasonings and spices, what we've chosen is going to be piquant and spicy). Stir well to mix everything.
Let the sauce cook for another 20 minutes, stirring occasionally to prevent it from sticking to the pan.

Blend the Sauce:

Once the sauce has cooked, carefully pour it into a blender or food processor.
Blend it until smooth.
Pour the sauce back into a bowl and whisk in the following ingredients:
¼ cup of peanut butter
2 tablespoons of soy sauce
1 tablespoon of vinegar
1 or 2 chopped chipotle peppers (adjust to taste for spiciness)

Step 3: Grill the Ribs

Preheat Your Grill:

About 30 minutes before you’re ready to cook, preheat your grill to medium heat.

Grill the Ribs:

Take the ribs out of the marinade and place them on the grill.
Grill the ribs, turning them every few minutes, so they cook evenly.
While grilling, brush them with the peanut-chipotle sauce every time you turn them. This will build up the flavor.
Cook the ribs for about 20-30 minutes, or until they are fully cooked (internal temperature should be 145°F or 63°C).

Step 4: Serve and Enjoy!
Once the ribs are cooked, remove them from the grill and let them rest for a few minutes.
Serve them with any extra peanut-chipotle sauce on the side for dipping.
