A visually stunning dish that is light and lively, it will tickle your taste buds and make you feel good. This is an interpretation of an old family recipe "Chlodnik" my grandmother used to make.
Ingredients:
- 1 pound Beets Roasted and Grated
- 2 Granny Smith Apples Diced
- 1 Onion Peeled whole
- 3 tablespoons Butter
- 4 cups Chicken Broth
- 1/2 teaspoon Tarragon
- 1 Bay Leaf
- 1/2 cup Heavy Cream
Directions:
Peel Beets and roast covered for 1 hour at 325 degrees Peel, core and dice the apple and place in lemon water covered by a paper towel to prevent browning. Use regular Chicken broth or substitute Vegetable broth for vegetarian.
Directions:
In a large saucepan set over moderate heat, cook beets and apples in butter stirring occasionally for 5 minutes. Add broth, tarragon, onion, bay leaf and salt and pepper to taste and simmer soup, covered, for 15 minutes. Discard bay leaf & onion. Add cream and puree with an immersion blender until smooth. Allow to cool and then refrigerate.
