Hearty Beef and Bean Chili

This hearty chili pairs perfectly with our Luna Primitivo and great for a cool fall or winter day.
Ingredients:
- 1 pound Ground Beef (omit for vegetarian option)
- 2 tablespoons Olive Oil
- 1 pound Chuck-Eye Steak cut into bite sized pieces (omit for vegetarian option)
- 2 cups Yellow Onion chopped
- 8 Garlic Cloves minced
- 1 tablespoon Salt
- 1/2 teaspoon Black Pepper
- 2 tablespoons Chili Powder
- 1/2 teaspoon Red Pepper
- 1 teaspoon Smoked Paprika
- 3 15 ounce cans Kidney Beans
- 1 28 ounce can Crushed Tomatoes
- 1 15 ounce can Tomato Sauce
- 1 1/2 cups Water or Beef Stock as needed
Directions:
Optional Toppings: • Shredded cheddar cheese • Sliced green onions • Minced cilantro • Diced avocado • Diced jalapenos • Sour cream • Crushed tortilla chips
Directions:
1. Brown ground beef in hot oil in a large skillet over medium heat, stirring often, 6 minutes, or until meat crumbles and is no longer pink. Transfer browned beef to a 6-quart crock pot. Add chuck steak cubes to skillet, and cook 6-8 minutes, or until browned on all sides, transfer browned beef to crock pot. Sauté onions and garlic, until softened and fragrant, about 5 minutes, do not brown. 2. Add remaining ingredients to crock pot and stir until well combined. If you prefer a thinner consistency, you can add water or beef stock. Cover and cook on HIGH 8 hours. 3. Taste chili and adjust seasoning, Serve with desired toppings
