This mac & cheese rocks like no other. Bold, spicy and oh-so-creamy. Pair it with a fruit-forward Pinot Noir like we do for the ultimate flavor experience.
Ingredients:
- 4 cups Macaroni, large size preferred
- 2 tablespoons Butter
- 10 ounces Cheddar Cheese grated
- 10 ounces Colby/Jack Cheese grated
- 10 ounces Pepper Jack Cheese cubed, .5 inches
- 2 teaspoons All-Purpose Flour
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Freshly Ground Black Pepper
- 1/2 teaspoon Cayenne Pepper
- 1/2 teaspoon Dry Mustard
- 1/4 teaspoon Garlic Powder
- 1 tablespoon Onion Powder
- 1/8 teaspoon Nutmeg
- 4 tablespoons Sour Cream
- 1 Large Egg beaten
- 1.5 cups Heavy Cream
- 1.5 cups Half and Half
- 1 Jalapeno finely diced, optional
- 3 cups Cheez Its Cracker Crumbs optional
- 4 tablespoons Salted Butter optional
Directions:
Directions: 1) Boil pasta in salted water. 2) Drain al dente pasta and place in a large, greased pan with tablespoons of butter, let butter melt all over pasta. 3) Spread the cubed pepper jack cheese throughout the noodles, then add the rest of the cheese and mix into pasta. 4) Whisk together egg, sour cream, cream, half and half and all seasonings and flour--if you like more heat, add the optional 1 finely diced jalapeno here. 5) Pour cream mix over the pasta and cheese. 6) Optional: melt 4 tablespoons of butter with ½ finely chopped jalapeno, then add the Cheez-It cracker crumbs and sprinkle over top of Mac & Cheese before baking, leave jalapeno out if you prefer less heat. 7) Bake at 350 for 35 minutes or until bubbling and starting to turn golden brown.
