An exquisite vegan pate that adds beautiful earthy flavors and rich textures that pair beautifully with your favorite Pinot Noir. Amazing on its own with a toast point or use it as a spread on a charcuterie board to add that extra elegance.
Ingredients:
- 1 pound Cremini Mushroom diced
- 8 ounces Walnuts
- 1 cup Olive Oil
- 2 cloves Garlic chopped
- 3 tablespoons White Miso
- 2 tablespooons Fresh Thyme chopped
- 1 tablespoon Fresh Rosemary chopped
- 2 tablespoons Fresh Flat Leafe Parsley chopped
- 1 tablespoon Sea Salt
- 2 teaspoons White Pepper
Directions:
1. Pan toast walnuts for 30-60 seconds in a dry pan over medium heat. Constantly move the nuts to prevent burning. 2. Add the cremini mushrooms, olive oil, and garlic then cook for 5-7 minutes until mushrooms get tender. 3. Cool entire mixture then add to food processor with rest of ingredients. 4. Start food process on low and blend for 60 seconds. Turn off. Then scrape down sides with a rubber spatula. Turn food processor back onto high and blend for 2 minutes until completely smooth. *Add 1-2 ice cubes during the food processing if product is having difficulties breaking down.
