Mushroom and Caramelized Onion Pasta

Indulge in the culinary delight of an effortless yet exquisitely flavorful pasta dish that is guaranteed to leave a lasting impression on your discerning guests.
Ingredients:
- 6 ounce spaghetti pasta
- 14 ounces Crimini mushrooms thinly sliced
- 1 tablespoon Dry Creek Olive Co. Garlic olive oil
- 3 tablespoons unsalted butter
- 1 each yellow onion diced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup parmesan cheese freshly grated
- 1 teaspoon fresh thyme
- 2 eac garlic cloves finely minced
Directions:
Bring a large pot of salted water to boil. Add the pasta to the pot when you begin cooking the mushrooms. Cook the pasta per al dente package instructions. Reserve 1 cup of pasta water before draining. Melt butter in a pan with olive oil in a large skillet on medium heat. Add onions to skillet and cook until caramelized, about 10 minutes. Add mushrooms and cook until they turn brown around the edges, about 5 minutes. Add salt, pepper, and minced garlic, and cook for two more minutes. Reduce heat to low. Add pasta and 3/4 cup of reserved pasta water to the pan with mushrooms and onions. Toss gently until water reduces and thickens to a saucy glaze that coats the pasta. If needed, add the remaining pasta water. Remove from pan and garnish with thyme and parmesan cheese.
