Matrix Peameal Bacon Lettuce and Tomato Sandwhich

My father is from Ontario Canada, I would always have and love Peameal Bacon (Canadian Bacon in USA) whenever I traveled up north to visit family. It is a true Canadian delicacy that I want to share with more people, because it is really tasty and quite easy to make.
Ingredients:
- 4 pounds pork loin
- 3 quarts water
- 2/3 cup maple syrup
- 2 tablespoons Prague Powder #1
- 10 Peppercorn
- 1 tablespoon mustard seed
- 1 bay leaf
- 1 1/2 cups coarse cornmeal
- 2 tomatoes sliced
- 1 head lettuce
- mayonnaise
- 6 buns toasted
Directions:
Directions for making the Peameal Bacon: In a container large enough to hold both the brine and the meat, mix together the water, maple syrup, salt, cure, and spices. Scoop 1 cup of brine and use a brine injector to inject the loin every inch inserting the needle about 3/4 inch deep. Place the loin in the container with the remaining brine, and keep the meat submerged. Cover and refrigerate for 4 days. Take loin from brine and pat it dry. Then roll loin in your corn meal. Let loin sit uncovered in refrigerator to let cornmeal meld to the loin.
Directions:
Take Peameal Bacon and slice it into about 1/4 inch slices then fry it on a griddle for 2 minutes each side. Slightly toast your bun, add mayo, slice of tomato and lettuce, then enjoy!
