This comforting Rustic Roasted Tomato Harvest Soup bursts with the flavors of ripe tomatoes and is perfect for autumn.
Ingredients:
- 4-5 pounds tomatoes sliced
- 2 medium onions sliced
- 1 pound carrot quartered
- 6 cloves garlic peeled
- 1/4 cup olive oil
Directions:
Toss all the above ingredients together and spread on one or two large rimmed baking sheets. Roast at 400 degrees for 45 minutes to 1 hour.
Directions:
For richer tasting soup, add 4-6 cups of chicken stock. If keeping the soup vegan or vegetarian, add 4-6 cups of vegetable stock. Simmer for 30 minutes. Use an inversion blender to puree ingredients. Simmer for another 30 minutes and serve topped with fresh basil, parmesan chips or homemade crostini and possibly some shredded cheese. During the second simmer, the addition of a parmesan rind will impart additional flavor. We have used Valley Ford Estero Gold for our non-vegan version. Optional homemade crostini - very thinly slice a baguette. Place slices on baking sheet. Drizzle with olive oil and bake at 425 degrees for 5-7 minutes. Slices should be browned and crisp.
