Octavio's World-Famous Cod Ceviche

Cool, light and refreshing, this easy Pacific cod ceviche is on the table in minutes and is perfect for parties. Serve with Selby's Sauvignon Blanc.
Ingredients:
- 1 1/2 pounds very fresh Pacific cod
- 1 1/2 cups fresh lime juice
- 1 onion, diced
- 2 tomatoes, diced
- 1/2 Haas avocado, pitted, peeled and diced
- Salt and freshly ground pepper, to taste
- 1/2 cup chopped fresh cilantro
Directions:
Remove any pin bones from the cod with tweezers or needle-nose pliers. Cut the fish into 1/2-inch pieces and place in a large glass or stainless-steel bowl. Add the lime juice and toss together well. Cover with plastic wrap and refrigerate for 5 to 7 hours, stirring from time to time. Add the onion, tomatoes and avocado, season with salt and pepper and stir to combine. Refrigerate for 1 hour more. Just before serving, stir in the cilantro.
