Pimento Cheese Mini Burgers

Here we feature a Midwestern classic, pimento cheese on beef sliders. These hearty little burgers pair deliciously with Kokomo Winery's Cabernet Sauvignon.

Ingredients:
  • 1/4 pound cheddar cheese, shredded
  • 1/4 pound pimentos, drained and minced
  • 1 1/2 tablespoons chopped green onions
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon cayenne pepper
  • 1 pinch freshly ground black pepper
  • 1 1/4 pounds ground beef
  • 12 Parker House rolls, toasted

Directions:

In a medium bowl, stir together the cheddar cheese, pimentos, green onions, mayonnaise, 1/2 teaspoon of the salt, the cayenne and black pepper. Set the pimento cheese aside.

In a large bowl, combine the ground beef and the remaining 1 teaspoon salt. Shape into 12 equal patties. 

Heat a grill pan over medium-high heat. Add the patties and cook for 1 to 2 minutes, then flip them. Spoon the pimento cheese onto the burgers and cook until done to your liking, 1 to 2 minutes more. 

Serve the burgers on Parker House rolls.
