Pork and Grilled Pineapple Banh Mi Sliders with Glass Noodle Salad

A pairing to excite the senses! Enjoy a selection of Matrix Winery's Russian River Valley Pinot Noir paired with roasted pork loin and grilled pineapple banh mi sliders with Jams sweet honey sauce, plus glass noodle salad with ginger soy dressing, crispy shallots and coconut.
Pork Loin and Pineapple
Ingredients:
- 1 1/2 pounds pork loin
- 2 cups tamari
- 2 cups hoisin sauce
- Sugar, to taste
- Fresh lime juice, to taste
- 1 fresh pineapple
Directions:
To prepare the pork, place the pork loin in a large resealable plastic bag. Add the tamari, hoisin sauce, sugar and lime juice. Seal the bag and refrigerate for 2 to 4 hours. Remove the pork loin from the marinade and cook on the grill or in the oven. Meanwhile, slice the pineapple into rings about 1/2 inch thick and brush with oil. Char briefly on the grill. Alternatively, you can use a stovetop grill pan or the broiler. Remove the skin and center from the pineapple and cut into pieces to fit on the sliders.
Jams Sweet Honey Sauce
Ingredients:
- 2 tablespoons Thai sweet honey jam
- 3 cups mayonnaise
- 1 can condensed milk
- 2 tablespoons soy sauce
- 1/4 cup fresh lemon juice
Directions:
To prepare the sweet honey sauce, in a bowl, whisk together the jam, mayonnaise, condensed milk, soy sauce and lemon juice. Let the sauce rest for 1 to 2 hours before serving.
Quick-Pickled Carrots
Ingredients:
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- 2 large carrots, peeled and julienned
Directions:
To prepare the quick-pickled carrots, in a bowl, stir together the vinegar, sugar and salt until the sugar and salt dissolve. Add the carrots and marinate for at least 1 hour.
Soy Ginger Dressing
Ingredients:
- 3 tablespoons grated fresh ginger
- 1/4 cup honey
- 1/2 cup Golden Mountain Seasoning Sauce
- 1/2 cup water
- 2 tablespoons sesame oil
Directions:
To make the soy ginger dressing, in a bowl, whisk together the ginger, honey, seasoning sauce, water and sesame oil. Let the sauce rest for 1 to 2 hours before serving.
Glass Noodle Salad
Ingredients:
- 1 package bean thread noodles
- 1/4 head napa cabbage, shredded
- 1 bunch fresh mint, chopped
- 1 bunch fresh cilantro, chopped
- 1 bunch fresh Thai basil, chopped
- 1 package coconut chips
- 1 fried shallot, sliced
- Soy ginger dressing, to taste (recipe above)
Directions:
To prepare the glass noodle salad, cook the bean thread noodles according to the package instructions, then drain and let cool. In a large bowl, toss together the bean thread noodles, cabbage, mint, cilantro, basil, coconut chips and fried shallots. Add the soy ginger dressing and toss to coat.
Pork Loin Banh Mi Sliders
Ingredients:
- 2 pieces baguette
- 1 1/2 pounds pork loin, sliced (recipe above)
- Grilled pineapple (recipe above)
- Sriracha hot sauce, to taste
- Quick-pickled carrots (recipe above)
- Chopped jalapeño chile
- Jams sweet honey sauce (recipe above)
Directions:
To prepare the sliders, using the baguette, pork loin, pineapple, Sriracha, pickled carrots, jalapeño and sweet honey sauce, assemble the banh mi sliders to personal preference. Serve with the glass noodle salad.
