You may have forgotten how much fun kebabs can be, but this simple, quick dish is really a crowd-pleaser. The Mediterranean spice plays off of the full-bodied and smooth Cabernet Sauvignon to create a complex and delicious pairing.
Ingredients:
- 8 bamboo skewers, each 12 inches long
- 3 pounds beef sirloin or filet mignon, cut into 1-inch cubes
- 16 cremini mushrooms, halved
- 16 pearl onions, peeled and halved
- 2 large red bell peppers, seeded and cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon onion powder
- 1/4 teaspoon Colman's dry mustard
- 1/4 teaspoon granulated garlic
- 1/8 teaspoon cayenne pepper
Directions:
Prepare a medium-hot fire in a grill. Soak the bamboo skewers in water for 10 minutes, then drain. In a large bowl, combine the beef, mushrooms, pearl onions and bell peppers. Add the olive oil and toss to coat. In another bowl, stir together the salt, black pepper, oregano, thyme, basil, onion powder, dry mustard, granulated garlic and cayenne pepper until well mixed. Season the beef and vegetables with the spice mixture to coat. Thread the beef, mushrooms, pearl onions and bell peppers onto the skewers, alternating the pieces and dividing evenly. Grill the skewers, turning as needed, until the beef and vegetables are nicely caramelized, about 6 minutes. Serve immediately.
