Butternut Squash Soup with Chardonnay Poached Pear Grilled Cheese

This is a classic combo with a twist. The Kokomo Chardonnay poached pear will bring some sweetness and acid, to balance the richness and pair with the wine. Make the soup, dip in the grilled cheese and purr in ecstasy.
Butternut Squash Soup
Ingredients:
- 2 tablespoons unsalted butter
- 1 medium onion, chopped
- 2 pounds butternut squash, peeled, seeded and cut into 1-inch chunks
- 1 cup Kokomo Chardonnay
- 6 cups vegetable stock
- 1 pinch freshly grated nutmeg
- Salt and freshly ground pepper, to taste
Directions:
To prepare the soup, in a large pot, melt the butter. Add the onion and cook, stirring occasionally, until translucent, about 8 minutes. Add the squash, wine and stock. Bring to a simmer and cook until the squash is tender, 15 to 20 minutes. Using a slotted spoon, transfer the squash to a blender and puree until smooth. Return the squash puree to the pot and stir in the nutmeg. Adjust the seasoning with salt and pepper.
Chardonnay Poached Pears
Ingredients:
- 1 cinnamon stick
- 1/4 teaspoon ground allspice
- 1 cup Kokomo Chardonnay
- 1/2 cup water
- 2 Bosc pears, peeled
Directions:
To prepare the poached pears, in a saucepan, combine the cinnamon stick, allspice, wine and water. Add the pears, cover and bring to a simmer. Cook until the pears are tender, about 20 minutes. Remove the pears from the cooking liquid.
Grilled Cheese
Ingredients:
- 1 tablespoon unsalted butter
- 4 slices sourdough bread
- 4 slices Gruyère cheese
- 1/2 poached pear, sliced (recipe above)
Directions:
Butter the outside of the bread slices. Turn 2 of the slices over and layer the cheese and poached pear slices on the unbuttered side. Cover each with one of the remaining bread slices, buttered side up. Cook the sandwiches on a griddle until the bread is toasted and the cheese is melted. Serve with the soup.
