A combination of savory and sweet, sure to be a treat. Mangiamo!
Ingredients:
- 1 pound thick-cut bacon slices
- Light brown sugar as needed
- Maldon salt for sprinkling
- Melted chocolate for brushing (optional)
Directions:
Preheat the oven to 350°F. Line a baking sheet with aluminum foil and place a wire cooling rack on top. Place the bacon slices on the rack and rub the top of each slice with 1/2 teaspoon brown sugar, like you would a dry rub on meat. Bake for 20 to 25 minutes, then flip the slices over and rub the top of each with 1/2 teaspoon brown sugar. Bake for 20 minutes more, keeping a close eye on the bacon. It gets to be a fine line between caramelizing and burning; the bacon should be firm and crisp. When the bacon is done, quickly take the slices off the rack and place the slices on parchment or waxed paper, or they will stick. Sprinkle Maldon salt on the bacon, or brush on melted chocolate and then sprinkle with salt. Salute!
