Bratwurst with Beer Mustard

We'll be serving up homemade bratwurst with two different sauces: beer mustard and tangy barbecue sauce.
Ingredients:
- 1/2 cup yellow mustard seeds
- 1/2 cup brown mustard seeds
- 1 1/2 cups malt vinegar
- 2 cups dark beer
- 1/2 cup firmly packed brown sugar
- 5 tablespoons honey
- 2 teaspoons salt
- 2 teaspoons ground allspice
- 1 cup Colman's dry mustard
- Cooked bratwurst for serving
Directions:
In a small sauté pan, toast the mustard seeds. Let cool and then roughly grind in a spice grinder. In a bowl, combine the mustard seeds, vinegar and 1 cup of the beer. Cover and let stand overnight. In a large saucepan, combine 1/2 cup of the beer, the brown sugar, honey, salt, allspice and bring to a boil, then remove from the heat. Let cool, then pour into a blender. Add the dry mustard and soaked mustard seeds and puree until the desired consistency is reached, adding as much of the remaining 1/2 cup beer as needed (drink any beer that's left!). Let stand overnight. You will have about 5 cups mustard. Serve the mustard alongside bratwurst.
