This is a Southwestern dish that our guests really enjoy. It's great served with honey corn muffins.
Ingredients:
- 6 eggs, lightly beaten
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 1/2 cups shredded cheddar-jack cheese
- 6 ounces cottage cheese
- 1 small jar pimentos, diced
- 1/4 pound green chilies, diced
- 3 shots Tapatio or other hot sauce, plus more, to taste
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Sour cream for garnish
- Salsa for garnish
- Diced avocado for garnish
- Chopped fresh cilantro for garnish
Directions:
In a bowl, stir together the eggs, flour, baking powder, cheese, cottage cheese, pimentos, chilies, hot sauce, salt and pepper. Cover and refrigerate overnight. Preheat the oven to 350°F. Spray a 9-inch pie dish with cooking oil. Transfer the egg mixture to the prepared dish and bake for 50 to 60 minutes. Serve topped with sour cream, salsa, avocado and cilantro.
