Chili Cheese Puff

This is a Southwestern dish that our guests really enjoy. It's great served with honey corn muffins.

Ingredients:
  • 6 eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 1/2 cups shredded cheddar-jack cheese
  • 6 ounces cottage cheese
  • 1 small jar pimentos, diced
  • 1/4 pound green chilies, diced
  • 3 shots Tapatio or other hot sauce, plus more, to taste
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Sour cream for garnish
  • Salsa for garnish
  • Diced avocado for garnish
  • Chopped fresh cilantro for garnish

Directions:

In a bowl, stir together the eggs, flour, baking powder, cheese, cottage cheese, pimentos, chilies, hot sauce, salt and pepper. Cover and refrigerate overnight.

Preheat the oven to 350°F. Spray a 9-inch pie dish with cooking oil. 

Transfer the egg mixture to the prepared dish and bake for 50 to 60 minutes. Serve topped with sour cream, salsa, avocado and cilantro.
