Dark Chocolate Espresso Mousse

This rich, dark mousse boasts a deep chocolate flavor. It's made with just five ingredients, so use the best-quality ones you can find.

Ingredients:
  • 5 1/2 ounces bittersweet chocolate
  • 1/4 cup espresso
  • 1 3/4 cups heavy cream
  • 3 egg whites
  • 1 cup sugar

Directions:

In a double boiler, combine the chocolate and espresso and heat over simmering water, stirring frequently, until the chocolate melts. Remove from the heat.

In the bowl of an electric mixer fitted with the whisk attachment, whip the cream until soft peaks form.

Using a clean whisk attachment, whip the egg whites until soft peaks form, then add the sugar. Continue to whip until firm peaks form.

Transfer the chocolate mixture to a bowl and using a handheld whisk, fold in the egg whites all at once. When the whites are almost folded in, fold in the whipped cream.

Refrigerate until chilled, about 1 1/2 hours, before serving.
