Oatmeal Griddle Cakes

Lightly crisp on the outside and cake-like in the middle, these griddle cakes are a warm and delicious way to start the day. Serve with a little butter, syrup or your favorite jam. Enjoy!
Ingredients:
- 4 cups buttermilk
- 1 1/3 cups quick-cooking oats
- 3 eggs
- 1 1/3 cups all-purpose flour
- 2 1/2 tablespoons sugar
- 1 1/4 teaspoons baking soda
- 1 1/4 teaspoons salt
- Corn oil for cooking
Directions:
In a bowl, stir together the buttermilk and oats. Cover and refrigerate for at least 4 hours or up to overnight, stirring once or twice. In a small bowl, beat the eggs slightly and add to the buttermilk mixture. Sift together the flour, sugar, baking soda and salt and add to the buttermilk mixture. Lightly grease a heavy fry pan or griddle with corn oil and set over medium heat. Ladle batter onto the pan. Fry the griddle cakes until there are a few bubbles breaking on the top and they are nicely golden underneath. Flip the griddle cakes and cook on the other side.
