Slow Cooked Pork Shoulder Hand Pie

The charred tomatillo and Anaheim chili braised pork shoulder, whole grain mustard, and golden raisins hand pie, makes a great pairing with our 2021 Pinot Noir, a blend of three Russian River Valley vineyards that deliver lush complexity with a classic elegance.

Ingredients:
  • 2 pounds pork shoulder cut into small chunks
  • 1/2 pound tomatillos charred
  • 2 Anaheim chilies charred
  • 1/2 cup garlic confit slow cook garlic cloves in oil for 15-20 minutes
  • 1/4 cup brown sugar
  • 12 ounces golden raisins chopped
  • 3 tablespoons whole grain mustard
  • 2 tablespoons parsley minced

Directions:

Combine the above ingredients for marinade...blend until smooth, cover pork and marinate overnight.

The next day add pork, marinade and 1 cup of water...braise covered for 1 - 1 1/2 hours at 350°F or until fork tender...cool in liquid...shred/chop into small pieces. Save extra marinade.

Combine pork with the following ingredients to finish mix
12 ounces of golden raisins - chopped 
3 tablespoons of whole grain mustard
2 tablespoons of minced parsley

Season to taste with salt and pepper and moisten mix with extra marinade as needed.

Cut pastry dough into 6" rounds, add 2 1/2 ounces of filling, fold and crimp edges.
Brush with egg wash and bake at 400ºF for 20 - 25 minutes or until golden brown.
