Mushrooms and Gouda in Puff Pastry

A lovely appetizer with savory mushrooms and cheese that welcomes Sauvignon Blanc.

Ingredients:
  • 2 tablespoon butter
  • 2 ounces olive oil
  • 12 ounces mycopia chef sampler mushrooms if large cut or torn into bite size pieces
  • 4 ounces Bucher Wines Sauvignon Blanc
  • 4 large garlic cloves minced
  • 4 cups baby spinach stems removed
  • 1 medium sweet onion diced
  • 1 sheet Costeaux Puff Pastry thawed but kept cold
  • 6 ounces Gouda cheese shreaded
  • 1 egg beaten for egg wash
  • 1 teaspoon water
Directions:
In a large skillet over medium heat melt butter and olive oil. Add onions and mushroom and sweat until onion translucent and mushroom are fully cooked, about 10 minutes.  

Deglaze the pan with the Sauvignon Blanc, turn heat to low and reduce until wine is reduced to about 2 tablespoons. Add garlic and and cook for 5-7 minutes, stirring often until garlic is soft. Do not brown or burn the garlic.  

Add spinach and stir cook until spinach is fully cooked and mixed well. Remove from heat and let the mixture cool. 

Once mixture has cooled down, Heat the oven to 425°F.  

Line a baking sheet with parchment paper. Beat the egg and water in a small bowl with a fork.

Sprinkle the work surface with the flour.  Unfold the thawed pastry sheet on the work surface. Cut 4"x4" squares. (Note: Pastry will later be folded into triangles) Using small spoon add mixture to half of each square only. Sprinkle Gouda cheese on top (as much Gouda as you prefer) Fold in triangles and pinch closed all edges. Place on a sheet pan lined with parchment paper. Keep making until all mixture is gone. 

To make egg wash, combine egg and water in small bowl and whisk with fork until well blended. Brush all the filled puff pastry with egg wash and bake approximately 20 minutes. Turn pan several times while baking until golden brown.
