Sauvignon Blanc and Shrimp Ceviche

Cool, light and refreshing! This dish creates a flavor explosion for your taste buds. With its light acidity, the ceviche makes a perfect pairing with our K Squared Cellars Sauvignon Blanc.
Ingredients:
- 1/2 pound Pacific shrimp, cleaned
- 1/2 pound scallops
- 1 teaspoon sea salt
- 1/2 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1 avocado, pitted, peeled and diced
- 1/2 cup chopped tomatoes
- 1 cup diced cucumbers
- 1/4 cup diced red onions
- 1/4 cup finely chopped fresh cilantro
- 2 tablespoons olive oil
- 1/2 cup K Squared Cellars Sauvignon Blanc, chilled
- Pita chips for serving
Directions:
In a medium bowl, combine the shrimp, scallops and salt and toss well. Refrigerate until the seafood turns opaque, 30 to 60 minutes. Add the lemon juice, lime juice, avocado, tomatoes, cucumbers, onions, cilantro, olive oil and wine to the bowl and toss gently. Serve the ceviche with pita chips.
