  • RECIPE YEAR: 2018
  • RECIPE BY: The Cook & the Drummer
  • YIELD: Serves 9
  • PAIRS WELL WITH: 2014 Notre Vue White

Made with ready-to-use puff pastry dough, this appetizer comes together quickly. Our Chardonnay is the perfect pairing.

Ingredients:
  • 1 sheet puff pastry dough
  • 9 fresh figs
  • 1 egg, lightly beaten
  • 1/4 pound best-quality Brie cheese, rind removed, cheese thinly sliced
  • Brown sugar for sprinkling
  • 1/4 cup fig jam

Directions:

Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Remove the puff pastry dough from the freezer and let thaw slightly. It shouldn’t be out too long because the dough tends to get too sticky and hard to work with if it gets warm.

Thinly slice the figs straight up and down. Set aside.

Roll out the puff pastry sheet so there are no seams. Work quickly so it doesn't get too sticky. Transfer to the prepared baking sheet and brush the dough with the egg wash.

Place the cheese slices on top of the puff pastry. Cover the entire pastry, leaving a 1-inch border along the edges. Lay the fig slices on top of the cheese, overlapping them down the middle. Sprinkle with a dusting of brown sugar.

Transfer to the oven and bake until the pastry is golden brown, about 20 minutes. Remove from the oven and immediately brush the top with a thin coating of fig jam. Cut into desired shapes and serve warm.
