- RECIPE YEAR: 2018
- RECIPE BY: Culinary Director Larry Forgione
- YIELD: Serves 1
- PAIRS WELL WITH: Lancaster Estate Cabernet Sauvignon, Alexander Valley
The balance of the sweet and savory flavors in this crostini pairs perfectly with the bold and well-structured Lancaster Estate Cabernet Sauvignon, a blend of all five of the red Bordeaux varietals planted on the property.
Fig Compote
Ingredients:
- 1 cup dried Black Mission figs
- 1 tablespoon balsamic vinegar
- 1/2 cup red wine
- 1 pinch freshly grated nutmeg
- 1 pinch freshly ground pepper
Directions:
To prepare the fig compote, in a small saucepan over high heat, combine the figs, vinegar, wine, nutmeg and pepper. Bring to a boil, then reduce to a simmer and cook, stirring often, until the mixture has thickened, 20 to 25 minutes. Pour into a bowl and let cool.
Assembly
Ingredients:
- 2 ounces goat cheese, at room temperature
- 4 baguette slices, lightly toasted
- 4 teaspoons fig compote
Directions:
To assemble the crostini, spread the goat cheese in a thick layer on the toasted baguette slices. Using the back of a spoon, make an impression in the cheese and top with the fig compote.
