This earthy mushroom risotto pairs perfectly with Pinot Noir.
Ingredients:
- Olive oil as needed
- 1 onion, chopped
- 1 1/2 cups Arborio rice
- 1/2 cup white wine
- 1 cup chopped mushrooms
- 1/4 cup spinach
- 2 cups vegetable or mushroom stock
- Salt and freshly ground pepper, to taste
- 1/2 cup Natalia's Sweet Potato Tomato Sauce

In a large saucepan over medium heat, warm some olive oil. Add the onion and cook, stirring occasionally, until just starting to soften. Reduce the heat to low and add the rice, wine, mushrooms, spinach and stock, and season with salt and pepper. Cook for 15 minutes. Add the sweet potato tomato sauce and cook over low heat for 5 minutes more, then serve.
