Beef Sliders with Cabernet Sauvignon Caramelized Onions and Blue Cheese Crumble

The richness of the beef and the creaminess of the blue cheese pair perfectly with our full-bodied Cabernet, which features lush tannins and hints of ripe cherry.

Caramelized Onions

Ingredients:
  • 2 cups Cabernet Sauvignon
  • 1/2 cup sugar
  • 4 medium red onions, diced
  • 2 tablespoons balsamic vinegar
  • 2 bay leaves
  • Salt, to taste
  • 1 pinch cayenne pepper
Directions:
To prepare the caramelized onions, in a large, heavy saucepan over high heat, combine the wine, sugar, onions, vinegar, bay leaves, and a pinch each of salt and cayenne. Cover and simmer for 15 minutes. 

Reduce the heat to medium, uncover and continue cooking, stirring occasionally, until the onions are nicely caramelized, about 45 minutes. As the liquid starts to thicken, reduce the heat and stir until the liquid is almost evaporated. Let cool, then adjust the seasoning with salt. Set aside.

Sliders

Ingredients:
  • 2 pounds ground beef
  • 1 egg, lightly beaten
  • 1/2 cup panko (Japanese bread crumbs)
  • 2 garlic cloves, minced
  • Salt and freshly ground pepper, to taste
  • Finely chopped fresh rosemary
  • 8 slider buns
  • 1/2 pound blue cheese, crumbled
  • 1 cup caramelized onions (recipe above)
Directions:
To prepare the sliders, in a large bowl, combine the ground beef, egg, panko, garlic, and a pinch each of salt and pepper and mix until blended. Form the meat mixture into small patties. Sprinkle both sides with salt, pepper and rosemary. 

Prepare a fire in a grill. Grill the patties, turning once, until medium-rare.

Place a burger on the bottom of each slider bun and top with the blue cheese and caramelized onions. Cover with the top buns.
