Occidental Waffles with Brown Sugar Sauce

This recipe was created entirely by accident. We made waffles with sour cream and always received rave reviews. One sleepy morning, we grabbed the yogurt instead of the sour cream container. After the yogurt was added, we realized our mistake but it was too late. Breakfast was minutes from being served. The resulting waffles were even better than our original, as the yogurt made them crisper.

Brown Sugar Sauce

Ingredients:
  • 1 cup firmly packed brown sugar
  • 1/2 cup water
  • 2 tablespoons light corn syrup
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
Directions:
To prepare the brown sugar sauce, in a saucepan, combine the brown sugar, water and corn syrup and bring to a simmer. Cook, stirring occasionally, for 5 minutes. Stir in the cream and continue to simmer until the sauce thickens slightly, about 5 minutes. Stir in the vanilla and keep the sauce warm.

Waffles

Ingredients:
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 1/2 teaspoons sugar
  • 4 eggs, separated
  • 1 cup plain yogurt
  • 1 1/2 cups milk
  • 1 cup less 2 tablespoons melted unsalted butter
  • Pinch of cream of tartar
  • 1 teaspoon vanilla extract
Directions:
To prepare the waffles, sift together the flour, baking powder, baking soda, salt and sugar into a large bowl. In another bowl, beat together the egg yolks, yogurt, milk and melted butter. Add the egg mixture to the flour mixture and mix together thoroughly. 

In a bowl, combine the egg whites and cream of tartar and beat with a mixer on high speed until stiff peaks form. Fold one-third of the egg white mixture into the batter until incorporated, then fold the remaining egg whites in completely. Stir in the vanilla.

Preheat a waffle maker according to the manufacturer's instructions. Cook the waffles and serve with the warm brown sugar sauce.  

Note: For a richer waffle, substitute sour cream for the yogurt.
