Bourbon-Fried Apples

John Harasty, owner of the Haydon Street Inn, was the former executive chef at Churchill Downs racetrack in Louisville, KY. He developed this breakfast recipe, finishing the apples with bourbon, as a way to pay homage to the time he lived in Kentucky.

Ingredients:
  • Canola oil for frying
  • 1 large flour tortilla, cut into 1/8-inch-wide strips
  • 3 tablespoons cinnamon-sugar blend
  • 5 Fuji apples
  • 1 tablespoon unsalted butter
  • 2 ounces bourbon

Directions:

In a deep fryer, heat the canola oil to 350°F. Line a bowl with paper towels.

Add the tortilla strips to the hot oil and fry until lightly browned. Transfer the strips to the paper towel-lined bowl to absorb the extra oil. Toss the strips with 2 tablespoons of the cinnamon-sugar blend and set aside to cool.

While the tortilla strips cool, peel, core and slice the apples.

In a large fry pan, melt the butter. Add the apples and cook, stirring occasionally, until they are no longer crunchy, then sprinkle with the remaining 1 tablespoon cinnamon-sugar blend. Add the bourbon and let it reduce for about 2 minutes, then serve the apples with the crispy tortilla strips.
