We serve eggs Benedict every Sunday and make our own hollandaise sauce. We prepare it the super-easy way by using our blender. Keep these tips in mind: When melting butter, do not let it boil; heat it to 150° to 160°F. When adding the butter to the blender, start very slowly and once you have added one-fourth of it, you can pour a little faster.

Ingredients:
  • 2 dashes Worcestershire sauce
  • 2 dashes hot sauce (we use Frank's Red Hot)
  • 2 tablespoons fresh lemon juice
  • 1 egg
  • 2 cups unsalted butter, melted

In a blender, combine the Worcestershire sauce, hot sauce, lemon juice and egg. Using a ladle, pour in the melted butter (it should be 150° to 160°F) VERY slowly with the blender on high speed. Keep adding the butter a little at a time. The sauce should begin to thicken. Keep adding the butter VERY slowly until it is completely blended into the sauce.  

Keep the sauce warm or serve immediately. It goes great with eggs Benedict or any vegetables.
