Bananas Foster Pancakes

Topped with the richness of bananas Foster, these pancakes pair well with a delicious mimosa or bellini made with Longboard Vineyards sparkling brut.
Candied Walnuts
Ingredients:
- 1 tablespoon ground cinnamon
- 1/2 teaspoon cayenne pepper (optional)
- 2 quarts simple syrup (equal parts sugar and water)
- 1 pound walnut halves or almonds
- 1 cup turbinado sugar
Directions:
To make the candied walnuts, preheat the oven to 325°F. Oil a baking sheet. In a large saucepan, stir together the cinnamon, cayenne, simple syrup and nuts. Bring to a boil and boil for 10 minutes, stirring occasionally. Drain well and spread the nuts in a single layer on the prepared baking sheet. Generously sprinkle with the turbinado sugar. Transfer to the oven and bake for 20 minutes, then stir. Sprinkle with sugar again and bake until crisp, stirring occasionally. The nuts will keep well in sealable plastic bags.
Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup candied wanuts or almonds (see recipe above), coarsely chopped
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon vanilla extract
- 1 egg
- 3/4 cup milk
- 1/4 cup shortening, melted
Directions:
To make the pancakes, in a bowl, stir together the flour, granulated sugar, baking powder and salt. Add the candied walnuts, nutmeg and vanilla. In a separate bowl, whisk together the egg, milk and shortening. Stir the egg mixture into the flour mixture just until moistened. Preheat a griddle and grease lightly. Pour 1/4 cup batter onto the griddle for each pancake. Cook until bubbles begin to form on the surface. Flip the pancakes and cook until golden brown on the other side.
Bananas Foster and Serving
Ingredients:
- 2 tablespoons unsalted butter
- 3 tablespoons firmly packed brown sugar
- 2 bananas, sliced
- Zest of 1/2 lemon
- 1 ounce rum
- Candied walnuts or almonds for serving
- Confectioners' sugar for sprinkling
Directions:
To make the bananas Foster, in a sauté pan, melt the butter and brown sugar, stirring until hot. Add the bananas, lemon zest and rum and cook until the bananas are tender. Spoon over the pancakes. Garnish with extra candied walnuts, sprinkle with confectioners' sugar and serve.
