Candied Walnuts

We use walnuts from our own tree, which is more than 100 years old. We candy the walnuts and leave them out for our guests to snack on. Delicious! You can substitute other nuts for the walnuts, if you like.

Ingredients:
  • 1 tablespoon ground cinnamon
  • 1 teaspoon cayenne pepper
  • 2 tablespoons salt
  • 2 quarts simple syrup (equal parts water and sugar)
  • 1 pound shelled walnuts
  • Olive oil as needed
  • 1 cup turbinado sugar

Directions:

Preheat the oven to 225°F. Oil a baking sheet.

in a large saucepan, stir together the cinnamon, cayenne, salt, simple syrup and walnuts. Bring to boil and boil for 15 minutes, stirring occasionally. Drain well and spread the nuts in a single layer on the prepared baking sheet. Generously sprinkle with the turbinado sugar. 

Transfer to the oven and bake for 1 1/2 hours, then stir the nuts and continue baking until crisp, about 1 hour more. Turn off the oven and let the nuts cool in the oven. They will keep well in sealable plastic bags. Makes 1 pound candied walnuts.
