Pulled Pork with Sin Zin Barbecue Sauce

This recipe is a Wetzel family favorite. As kids, we helped to bottle homemade wine. A barrel of wine was raised up so gravity flow could be used to the two-spout filler. Corks were put in by hand and labels were glued on by hand. Boxes were filled, glued and stacked, and the wine was aged. This was slow work and we were always hungry afterward. Mom fed us spare ribs with this homemade sauce.
Sin Zin Barbecue Sauce
Ingredients:
- 1 teaspoon ground ginger
- 2 teaspoons dry mustard
- 1 teaspoon kosher salt
- 2 dashes Worcestershire sauce
- 1/2 cup soy sauce
- 1/2 cup Sin Zin red wine
- 1/2 cup molasses
- 1 cup ketchup
Directions:
In a saucepan over medium heat, combine the ginger, mustard, salt, Worcestershire, soy sauce, wine, molasses and ketchup and bring to a simmer, stirring frequently. Reduce the heat to low and cook, stirring, for 10 minutes. This makes enough for a 3-pound pork shoulder or 2 large racks of spare ribs.
Pulled Pork
Ingredients:
- 3 pounds pork shoulder
- 2 teaspoons salt
- 1 teaspoon freshly ground pepper
- 2 teaspoons ground cumin
- 1/2 cup apricot jam or plum chutney
Directions:
Preheat the oven to 300°F. Place 2 large sheets of aluminum foil on top of each other on a work surface. Place the pork in the center of the foil and season on all sides with the salt, pepper and cumin. Spoon the jam over the pork. Fold the double layer of foil around the pork and crimp the edges to seal tightly. Place in a large baking dish. Roast until the pork is tender, about 4 hours. Alternatively, use a slow cooker: Season the pork as directed above. Place in a slow cooker and spoon the jam over the pork. Cover and cook on low according to the manufacturer's instructions for 4 to 5 hours. Let the pork cool, then shred and transfer to a large bowl. Stir in the Sin Zin barbecue sauce (recipe above).
Serving
Ingredients:
- 8 hamburger buns
- Coleslaw for serving
- Pickles for serving
Directions:
Serve the pulled pork on the buns with coleslaw, pickles and a glass of Sin Zin.
